Zhengyalov Hats

Zhengyalov Hats is the real pride of Artsakh cuisine, its signature dish. Zhengyalov Hats literally means “bread with greens”. This light dish made from simple unleavened dough and several types of greens has always been the hallmark of Artsakh.

The recipe of Zhengyalov Hats is simple, like all genius. The dough for it makes the most common – flour, water and salt. There is no dobt, that the main secret of this dish in the filling: up to twenty types of greens are put in a real zhengyal! In winter, however, a smaller number of herbs can be dispensed with – only two varieties of greenery are considered truly obligatory for zhengyals: ktsmtsuk and hndzmndzuk, which grow in the mountains and plains. The dough is rolled into a thin layer, a generous portion of the toppings from greens with vegetable oil is placed on it, a little salt and pinch the edges in the middle. Zhengyalov Hats are baked on a special flat roasting pan called saj for about 3-4 minutes, and after baking this dish is eaten even faster.
