Bacalao pil pil


   Dried Cod in a Spicy Garlic Sauce
   1½ lbs (700 g) dried salt cod
   1 whole bulb of garlic
   1 dried red pepper pod
   ¼ cup (50 ml) olive oil
   Black pepper


   Soak the salt cod in cold water for

   at least 24 hours, during which time 
   the water has to be changed 
   several times. Then cut the fish into
   small pieces, rinse well, and drain.

   Peel the garlic cloves and chop 

   them finely. 
   Break up the pepper pod into 
   several pieces.   
   Lightly fry the garlic and pepper 
   in the oil, then    remove the pieces 
   of pepper.
   Now add the pieces of fish to the 
   garlic in the pan. Place them skin-
   side down and cook them  for 20 
   minutes over a low heat, stirring 
    (The stirring causes the olive oil, the gelatin in the fish skin, and the garlic to combine into a 
    sauce which reaches the consistency of a mayonnaise.) 
   Add pepper to taste. Serve with 
   boiled potatoes.

       A suitable drink to accompany this dish is Txakoli, a 
       fresh, tingling white wine from the Basque country.
