Pide – Flat bread

    Crusty bread is one of Turkey’s favorite staple foods. There is a wide variety of shapes, 
    ranging from flat loaves to rolls and baguettes. 


    1 oz (30 g) yeast

    1¼ cups (250 ml) lukewarm water
    4¼ cups (500 g) flour
    1 egg yolk
    1 Tbs olive oil
    1 oz (30 g) sesame seeds


  Dissolve the yeast with a pinch of

  sugar in half of the water.

  Sift the flour into a bowl, add the 
  salt and the dissolved yeast and stir 

  Add the remaining water,

  and knead the dough until smooth 

  and elastic and no longer sticky.

      The prepared dough is carefully 

      weighed out into equal portions.
      Cover, and leave in a warm place 
      to rise for at least 20 minutes.
    • Pre-heat the oven to 400 °F (200 °C).

      Shape the dough by hand on a 
      floured surface, making a slight 
      hollow in the middle. 
      With a finger dipped in oil, press 
      a lozenge pattern on the surface 
      of the dough. 
      Place the dough on a well-oiled 
      baking tray. 
      Paint the surface of the dough with
      a mixture of the egg-yolk, olive oil
      and 1tsp of sugar, and scatter the 
      sesame seed over it. 
    • Bake for about 20 minutes, until the bread is golden brown.

      Delicious flat loaves, which rise 
      beautifully as they bake, while 
      developing a good crust.
