Salsa di Pomodoro – Tomato Sauce


1 onion
1 garlic clove
3 Tbs olive oil
2 lbs (1 kg) ripe tomatoes
1 tsp basil, finely chopped
Salt, black pepper


Peel the onion and the garlic clove, chop finely
and gently fry in the oil. Cut the tomatoes into small pieces  and add to the onion and garlic.

Bring to the boil and simmer, covered and over a low heat, for 45 minutes.

Press through a sieve, add the basil and season well. Leave to stand for 10 minutes.

This classic pasta sauce goes well with all kinds of pasta. Serve the pasta with 3-4 tablespoons of sauce and one knob of butter per portion.
