Finkenwerder Maischollen-Finkenwerd May Plaice

4 plaice
Lemon juice
Salt, black pepper
1 Tbs flour
5 oz (150 g) fatty bacon
1 Tbs butterfat


1. Fillet the fish.

2. Rinse and season with lemon juice.


    3. Season with salt and pepper and turn in the flour.

    4. Cut the bacon into small cubes and put them in a pan with the butterfat. Remove the bacon bits and drippings and set aside.

      5. Fry the fish in hot fat on both sides (4) and arrange on a platter. Reheat the bacon bits and spoon them over the fish.

      6. Parsley potatoes and green salad are nice accompaniments.
